Well, Hello! Sorry it's been a couple of months! Needless to say, I have a lot to post and catch up on so I'll get right to it. And it will be out of sequence, for sure, but here-goes!
Last week I added our Monthly Vegan Dinner Club. We went to The Forester in Irvine, PA. The appetizer photo is above. It's a marinated mushroom, slaw, pickled onion and jalapeno, and a Lime Crema.
Next up we had this colorful salad with Kale, Strawberries, Blueberries, Chickpeas, Tomatoes, Onions, and Radishes. There was a light dressing on it, too.
We then had a Pasta Dish with Edamame, Sun Dried Tomatoes, Sweet Peppers, Kale, Onions, Carrots, Wild Mushrooms, and Garlic Bread.
Then came the dessert...a Chocolate Peanut Butter Tart. It was so rich! Of course, I had a lot of leftover for the next day. It was a nice time. I was able to sit with 2 girls I went to High School with. One is a restaurant owner and she wants to add more vegan options to her menus, too! I'm looking forward to upcoming months!
