It seems this is becoming a regular occurrence. My blogging frequency has been slipping again. Sorry about that. So without further adieu...here are some life updates and some vegan finds as of late.
With this first photo - you will see me - the 2nd from the left. This was our officers induction last month for Zonta. I'm the new President. I'm eager and excited but also a little nervous and hope I do a good job. I have large shoes to fill of those who served before me. I will lean on them for advice - that is for sure.
Yesterday I was able to meet Cindy who is one of those in the Ukraine Relief Initiative who went over to Poland to help refugees. She and her partner Dana were over with "Boots on the Ground". As much as I would like to help over there - I'm not able to travel overseas - and am trying to do things here locally and regionally. We hope to have a few fundraisers in the near future so I will try and blog more about that down the road, too.
I received these bracelets and other swag from A Safe Place here in our county that helps those facing Domestic Abuse. I thought this was a neat photo so I put it on FB and IG, too. I applied to be on their board. I'll let you know if I get on it.
My new assistant brought these Lilac's in the office from her own bush/tree. They were lovely in the office but I'm afraid I might be allergic to them. My father used to also be allergic to Lilacs, apparently. But while they were in the office - this is what they looked like. I placed them next to my Salt Lamp and photo of my niece.
Speaking of my niece...she had her first dance recital 2 Friday's ago. She did great! This is a pic of her and my sister. The recital was BROADWAY Themed and she did one tap and one ballet. My niece turns 5 years old on June 7th. This Sunday we are going to gather for a birthday party near their home at a local park.
During Memorial Day Weekend - last weekend - we were able to get some camping in. This is the first time Cricket has officially camped. We are trying to get her used to the camper. I think it will be ok. We did get her a flea and tick collar - which is another first for her and us. This weekend we will be taking a Pet Friendly Trip (not too far away).
I was able to find some Miyoko's Liquid Moz and have been using it on a few different things. One thing I tried was this Vegan Omelette. I used Just Egg in an Omelette Maker and added some of the Vegan Cheese. When it was done - I added Ketchup. It tuned out nicely. Next time I'm going to add Spinach and Onions. Maybe even Mushrooms.
And...that brings us some more Vegan Cheese Finds! This time at Aldi. I was actually able to find them at my local Aldi. I was surprised and thrilled. The Blue Cheese is good. I've only used it once so far and that was as a topping for loaded fries last night.
The Parm was another one I found. I also added some of this to my fries last night. It was fairly good. I will have to do some more experimenting with it soon.
I have yet to open the Feta. I'm just darn excited about the options that are available. YAY!
I also grabbed these Ice Cream Bars and they were wonderful. Peanut Butter. YUM!
And Forest Fruit. YES PLEASE! These were lovely, too! So thankful I was able to find them locally. I just hope they continue to carry them. That's not always the case here (which is frustrating).
Then they had this Spicy Korean BBQ Style Beef Bowl. The flavor was good but I could have done without the fake beef. I'm not usually a big fan of meat alternates. Mostly because I wasn't a fan of real meat to begin with. Again, I'm just glad there are more and more options now and I do like to try everything at least once when I am able to.
Then there was this bowl. It's the Thai Sweet Chili Chicken. It was labeled VEGAN but it actually contained Honey. I sent ALDI a message on Facebook about it.
Oh! I almost forgot to post these Vegan Cheese Slices, too. I have tried the Cheddar. They are a little dry and crumble easily but the taste isn't too shabby. I have yet to open the Moz Slices.
Another thing I had not blogged about yet but posted a while back on IG is this Nepal Tofu Bowl. It was pretty good. I got it in the grab-and-go over at Erie Whole Foods Co-Op. The base for the sauce was Tomato Paste and Red Pepper, I believe, and then more spices and such.
