A few years ago I saw a recipe for a Saltine Salad. I wasn't sure what to think of that. The more I thought about it - I wondered if it stemmed from the Great Depression Era - because I knew that it was pretty cheap to make. I had heard someone say that it's a Southern Recipe but then other people I know in the south had never heard of it - so I'm not sure, really. Regardless - this was a recipe to remember - and TRY - and I did - AND I was impressed!
I made it at camp last year (or was it the year before) for the first time and it was a hit with the few that ate it - mainly my sister, father, and I. Of course, I veganized it. There's not much to the recipe. You basically crumble up Saltine Crackers and add - to taste and texture/consistency - vegan Mayo. I then added some Black Pepper and Red Onion.
We first ate it as a sidedish but then I bought some Romaine Hearts and stuffed them with the leftovers and ADORED it even more. I can totally see this 'salad' being used in Pita/Pockets, too! Maybe a Sandwich Spread. Put it in a sub! What do you think? Would you try this? Have you already tried this? What else could you use this with/in? Have you heard of the origins of this recipe?
