It's not unusual for me to post 2 or 3 blog entries per day - especially during the week - but the last couple of days I have really bumped that up to many, many more entries. I'm trying to keep myself busy and thinking about other things and so far this is the way I'm doing that.
Part of it is because I'm craving things to do and going back and realizing some of the things I was able to do during the last couple of years which was nice but I have been couped up for too long and it's driving me nuts, honestly. The second reason is that I have been hungry for something good and I just have been food bored and am trying to talk myself into making something I know I would like.
Most vegan Indian foods I really like. This is one of them that I have made many times in the past and I hope to make again soon. It's Rajma - AKA - Kidney Bean Curry. I've made this a few different ways with different measurements but I think the following is close to what I normally do...
2 Cups Kidney Beans
1 Small Onion
4 Cloves Garlic, Minced
Ginger Powder to taste
1 teaspoon each of: Turmeric, Cumin, Ground Coriander, Garam Masala
2 Cups Water
2 Cups Tomatoes, diced
Sugar & Sea Salt to taste
