Pistachio Maple Dijon Mustard

Tasty (But Pricey) Condiment...

A couple of years ago I made a "Pistachio Maple Dijon Mustard" and it was incredible.  The only problem?  Pistachios are expensive!  But this was soooooo worth it - as a treat - just can't do it very often!

I combined Pistachios, Maple Syrup, and Dijon Mustard in a high speed blender and blended until smooth.  It was roughly a 1/3, 1/3, 1/3 ratio.  If you want - you could mess around with that based on preferences.

I LOVED this and think about it often.  Here - I have it pictured with a preztel but you can use it in place of other condiments or dips/sauces.  I have tried it on a Veggie Burger before, a dip for sweet potato fries, and all sorts of raw veggies for snacking!  

Would you try it?  If so what could you see yourself putting it on or in?
