Growing up my mother made P.O.M. often. I remember her even saying "I'm making "Pom" tonight". Pom - also known as - P.O.M. - stands for Peppers, Onions, and Mushrooms. Basically she would just throw all 3 ingredients into a frying pan and cook them down in either a margaine or an oil. You could do it with water, too, I suppose.
It's a very simple recipe and dish that I still do often to this day! It's so savory! It's so easy! So very tasty!
Sometimes - if I feel like it - I add Garlic. Garlic is always great! I'm a BIG fan of Garlic. Sometimes I've added other veggies, or seasonings, etc. It's a wonderful base dish, too, that you can build on. Plus...it's always nice to place on top of rice, quinoa, or noodles!
