I'll be blogging about Mad Mex in Erie, PA, often because they do have a lot of vegan options. This is just one of them. They offer Violife Vegan Cheese and Tofutti Sour Cream for those who are vegan or dairy free.
This Bowl is one of their seasonal items but it's been available more often than not because I've had it a couple of times now. It's the Roasted Cauliflower Bowl and it has - of course - Roasted Cauliflower - along with Farro, Black Beans, Corn, Vegan Cheese, Onions, Peppers, Pico de Gallo, Guac, and I opted for the Marinated Tofu. I think there were sprouts in there once, too. I also went with the Tofutti Sour Cream!
I mean...LOOK AT THIS...it's glorious! And wonderful! And it was HUGE! So many flavors, textures, and plant-based/vegan nutrition is going on here! YUM!
