A couple of weekends ago my sister, niece, mom, dad, and I traveled to see our extended family again.  This time for a 50th Wedding Anniversary for my Aunt and Uncle.  It was nice to see everyone under different circumstances than last time we were in town.  The Sunday morning after, and before leaving the area, we decided to go to a Breakfast Spot in Hamburg, NY.  I was able to create my own plate out of another dish.

On the menu it was called the Healthy Benny and it contained basically Eggs Benedict with Spinach, Broccoli, and Tomato.  I asked for the toast - DRY - (NO Egg, of course), and I kept the Broccoli, Tomato, Spinach.  They also added some Onion.  I asked for a side of Salsa and it came with fruit.  Honestly, this isn't something I would normally order but when I saw that it was adaptable with greens - I was game!  I'm so glad I opted for this - it was tasty!

 I finally got my hands on some of the Vegan Ranch that Hidden Valley has put out.  I first located it after many months of searching - at the Corry, PA, Walmart of all places.

About 2 weeks later I located the SPICY version at the Warren, PA, Walmart - and they finally got the regular version - so I grabbed one of each.  With the SPICY one - I never knew it existed!  I was SHOCKED that it was actually SPICY, too!  Usually when I buy SPICY stuff - it's really not all that spicy!  This certainly has a KICK!

Here's a cheater meal I had for a work lunch the one day.  It's a Chickpea Lentil Dish along side a Spinach Dal.  It was nice.  I added a bit of Vegan Feta to the Spinach Dal (VioLife) and it reminded me of a Paneer.

I've decided to pump up my Raw Foods again.  I usually do a lot of salads but I will be doing even more for the forseeable future.  The one above contains Spring Mix, Sprouts, Walnuts, Sunflower Seeds, Raisins, Dried Cranberries, Tomatoes, and (Hiko Foods) Sauerkraut, Shredded Red Cabbage, Pickled Mini Patty Pan Squash, and Beets.  Not pictured is the Italian Dressing I topped it with.

 I had a similar based salad but only featured the Hiko Foods Shredded Red Cabbage here.  The is a Vegan Creamy Italian I made combining a regular Italian with Vegan Mayo.

There's another place in downtown that I go for Salads because they let me basically build my own.  In this one I have Iceberg Lettuce, Broccoli, Avocado, Hummus, Pineapple, Cucumber, and I went back to the office and added Guacamole, Hiko Foods Shredded Cabbage, and VioLife Vegan Cheese Chunks.  I combined a Poppy Seed Dressing with a French Dressing and came up with a new favorite...Vegan Poppy Seed French Dressing!

A couple weekends ago my parents, husband, his brother, and I went to an outside Potluck.  I - of course - always bring vegan options!  This is the first of 2 dishes I brought.  It's basically a Vegan Street Corn Salad.  It contains Sweet Corn, Vegan Sour Cream, Fresh Cilantro, Lime, Vegan Parmesan Cheese, Radishes, Garlic, and Old Bay Seasoning.

And this is Vegan Potato Salad.  Honestly, I don't make a lot of Vegan Potato Salad but I am going to start.  It's easy and this was SUPER YUMMY!  Basically - just - Potatoes, Celery, Pickles (or Pickle Relish), Vegan Mayo, a little bit of Garlic, Sea Salt, Pepper.

I recently won these two vitamin tubs from gov3gan on insta.  I'm not much of a vitamin-taker but have considered it for a while now.  I'm starting with the 7 Essential Nutrients one first and then will try the other one after it's finished.

Cricket went to the vet this morning and it was determined she needed some dental work.  It won't happen right away because they are pretty booked but that will be something we will be persuing as soon as we are able.

Tomorrow is our area's first Lean In CIRCLE.  More than 50,000 women have started Lean In Circles in 184 countries and new circles are starting every day.  Circles bring women's together.  In these small groups, women can get and give peer mentorship, sharpen their skills and have a place to be unapologetically ambitious.  I decided to start one for our area but it will be under the umbrella of our local Chamber.

I've been recently asked if I might want to join the board of A Safe Place.  I would like to if they will have me.  I applied and will probably find out in a month or two once they vote one me.  A Safe Place assists victims of domestic violence and/or sexual violence.  They have done some really wonderful work in our area and have constantly been a resource for those in need.

The URI Group I am helping with is continuing their work - until it is no longer needed - which I, unfortunately, do NOT see it slowing down anytime soon.  We are raising money locally, purchasing items for refugees, and locals are traveling to Poland to help refugees with "boots on the ground".  Since I am not able to travel to Poland I will do what I can locally and behind the scenes.

Oh!  I chopped my hair off!  I have been hesistant thinking I would not be able to maintain it but it's easier than I thought it would be.  I'm getting used to it.  I do have more updates but I think I have overloaded you  with info on this post.
