Using Leftover Eggplant Puree

A while back I remember finding jarred Eggplant Puree and grabbed it because I wanted to try it and it was on sale.  I remember liking it but you could certainly make your own straight from the Eggplant.  I don't always have access to Eggplant here so I assume that had something to do with my excitement back then when finding the product.  

The first thing I made with the Eggplant Puree was Baba Ganoush.  With the leftovers I made these Eggplant Cakes.  I just happened to kick them up a notch with some Jalapeno Oil but that's optional, of course.  Here's what I used for these Eggplant Cakes:

2 Cups Eggplant Puree

2 Cups Vegan Bread Crumbs

Lemon Pepper Seasoning to taste

I mixed everything together and made them into patties and pan-fried them in Jalapeno Flavored Grapeseed Oil until crispy.  I really enjoyed them and have been thinking about them lately and might have to try them again once I find Eggplant.  This time around I will be making my own Eggplant Puree.
