Since I am the only one in the house that eats Quinoa - I tend to make too much Quinoa when I cook it up - so leftovers are always available and an option. As I was digging thru some of my recipes I've made over the years I stumbled upon these two. A Fiesta Quinoa Bowl and Fiest Stuffed Peppers.
For the Fiesta Quinoa Bowl - or Stew - or whatever you want to call it - I started with 2 cups of cooked Quinoa and threw it in a large pot with a can of Diced Tomatoes, a can of Black Beans, 2 Cloves of Garlic, a Small Sweet Onion, 3 teaspoons of Fajita Seasoning and cooked down until I reached the consistency I wanted (which was drier than the picture shown above on the left).
I have done a version of this many times. Other attempts have been with different seasonings. But there is just something about the Quinoa-Diced or Stewed Tomatoes-Black Bean combo I can't get enough of.
Moving on to the leftovers. The photo on the top right shows Fiesta Stuffed Peppers using the leftover Fiesta Quinoa. Looks are a little deceiving because those are actually mini peppers that I cut in half and stuffed and not regular sized ones. Once I stuffed the mini peppers with the leftover mixture I baked them for about 25 minutes. Both meals were memorable. Which one would you reach for first?
