Sunday Morning we decided to go out for breakfast. I usually dread breakfasts out. There aren't a lot of options for vegans. I'm totally complaining because my go-to/stand-by is a Bagel with tomato - and I'm a HUGE fan of that option.
I was surprised when we stopped at a local chain and I saw that they had Protein Breakfast Bowls. Of course they had eggs, cheese, and a creamy sauce but I asked if I could remove those items to make it vegan and the waitress said YES.
This was actually better than I anticipated - to be honest. I would order this again. I'm hoping that it's not a limited time menu item - but I bet it is.
My version of this bowl contained Sweet Potatoes, Onions, Black Beans, Corn, Tomatoes, and Avocado. I topped it with Frank's Hot Sauce instead of the sauce that came with it. It hit the spot that morning.
