When I can find purple potatoes - I buy them. Not that I have been able to find them lately but I was thinking about them and thought I would pull up this archived dish and re-share on this new blog.
Here - I have Potatoes - both Baby Yellow and Baby Purple and Broccoli. Sometimes I just add some Coconut Aminos for a nice stirfy. If I'm looking for something more "buttery" I would use a "Butter" flavored Grapeseed Oil (which I haven't found a vegan version since my Wildtree days) or - more simply - add some Earth Balance. If I want something with a kick I have used Jalapeno Oil. Another way I have had these was by adding a bit of Dijon Mustard to them once I have cooked them on the stovetop.
Just a few different ways to simply flavor these. And it's pretty cheap, too, other than the price of Broccoli lately, but it's still not terrible for a meal or even a large side dish.
