Eating Vegan When There Are Little-to-No-Vegan-Options

Over the weekend we intended to visit a specific eating establishment and I was going to get their grits and I prepared by bringing my own vegan butter and vegan cheese.  However, when we got to the place - they weren't taking any new customers due to technically/Internet issues which ran the entire joint.

Instead - we traveled across town to a somewhat newer place that I had only been to once before.  It was earlier in the day - late breakfast time frame - and I didn't want 'another salad' because I have been having SO MANY of them lately.  There wasn't munch on the menu so I got creative.

I ordered a PLAIN Sweet Potato with a side of Salsa and a side of Avocado.  When it came out I assembled this STUFFED SWEET POTATO.  I mashed up the Sweet Potato, added the Vegan Butter and Vegan Cheese that I smuggled in and then added the mashed Avocado and Salsa.  

This may look weird but it was oddly good.  It was filling and tasty.  I also had a side of Apple Sauce.  

Ironically this is the same place our Monthly Vegan Dinner Club will be going to.  They were going to offer spaghetti without the meatballs or you could order 3 sides as a plate for a reduced price.  I think our club might have to work on this establishment a bit to see about another offering.  I'm grateful and glad they are doing this for us but ultimately we are trying to get them to have vegan options that go beyond a salad.

Regardless - this Stuffed Sweet Potato I made with sides and additions that I brought from home was good.
