For those of you not in the US - this may raise some eyebrows. This meal sort of reminds me of "Shit on a Shingle" but with a twist. For those of you who haven't heard of the meal - also known as S.O.S. or "Poop on a Stick" - it goes back to US Military and war-times - our soldiers would eat a meal that consisted of - usually Corned Beef and a heavy cream sauce and they would serve it over toast. This is a vegan version with a few twists that I made over the weekend while hibernating in my house.
Starting from the bottom layer and working our way up...I used Rye Toast and spread some Miyoko's Scallion Cream Cheese on the bread. I then made the top layer on stovetop and added it after I got it "just so". The top layer is Upton's Chorizo, Rice, and Violife Shredded Cheese.
It was oddly good. REALLY GOOD. There were many layers of flavor and textures going on and I would certainly have this again in some way, shape, or form. I know this is pretty 'out there' and you can totally tell that I threw it together with the items I hand on hand but I didn't want to let anything go to waste and needed to use the bread but really wanted a 'full meal'.
