Sunday I went over to my parents house and spent some time with them, my sister, and niece. I made this dish with things they had on-hand. That's usually 'how we roll' when we are there. I literally kept throwing more and more things in this while I was making it. It turned out surprisingly good!
I shredded some Brussels Sprouts and pan-fried them. I added some Onion, Celery, about 4 Tablespoons of Red Pepper Hummus, 2 Tablespoons of Salsa with some Almond Milk, Lemon Juice, and Vegan Butter/Margarine to make a sauce. This was very flavorful with a nice amount of TANG.
