It's been nearly 2 weeks since my last blog post. Where has the time gone? It's been hella busy! I really do have a lot to post but not a lot of time to do it these days. While I'm grateful for my new assistant - it some ways it does make me even busier. That, and I have taken on several new projects, too. I'm thinking I will probably blog on Tuesdays and Fridays at the minimum moving forward. I might look into scheduling some posts too.
Regardless, I have a lot to share today including this photo above. I really have no idea how many weeks or months ago I ate it at this point but I remember I made a lovely Alfredo Sauce for it and it contained Chickpeas, Broccoli, and Mushrooms.
Another EATS pic I need to dump is this Fiesta Polenta of sorts. It's Cubed Polenta, Sweet Corn, Black Beans, Salsa, and melted Vegan Cheese. It was tasty.
Here's a teaser of a salad I had at a local Lunch Spot. It contains Marinated Tofu, Mixed Greens, Carrots, Blueberries, Quinoa, and a Berry Balsamic for the dressing. I came back and added some Hiko Red Cabbage. It was pretty nice!
I stopped by a local taco place and they were able to make me these veggie street tacos that weren't on their menu. I preferred the ones they made me the last time but these were ok, too, just a bit salty for me. These had cooked Carrots, Red Peppers, Onions, Herbs, Broccoli, Cauliflower, Green Peppers, and Avocado.
At Home EATS have been pretty strange lately but some have been creative and yummy, too. I ended up putting toppings on Potato Patties and I have to say I loved them. This was one of the ones I did with some success.
I air fryed the patties and topped with a mixture of Shredded Brussel Sprouts, Onion, Red Peppers, Mushrooms, Vegan Cheese Shred, a variety of Cherry Tomatoes that had been slightly cooked/softened, and topped with Cauliflower Hummus.
Speaking of Brussel Sprouts - I air fryed some of those a while back, too. Also pictured here are some raw Sweet Red Peppers and a sauce/dip. I used the following to make the dip: Cashews, Lemon Balsamic, Maple Syrup, and Mustard and it was awesome.
And here's another Potato Patty topped with the following: Chopped Brussel Sprouts, Onions, a variety of Mushrooms, Orange Bell Peppers, Field Roast Spicy Mexican Chipotle Sausages, Follow Your Heart Smoked Gouda Vegan Cheese.
Here's another look at it. I have to say I really enjoyed these Topped Tater Patties and will be doing more in the near future. The patties are super cheap at ALDI and come in a large sleeve that fit nicely in the freezer and they are easy in the air fryer. Plus, it's a great way to use what ever you have on hand.
In other news - Ms. Cricket has been doing well but I think we will be looking into a Dental visit soon. I'll also be looking into a flea and tick collar because we hope to take her camping at the fairgrounds this year.
I mentioned at the beginning of this post that I have jumped into a few new projects and this is one of them. A local man has encouraged other individuals to travel to Poland to help the refugees fleeing from Ukraine. I cannot travel to Poland but really wanted to help on the local level so I'm now helping a few others with organizing volunteers, information, supplies, donations, and behind the scenes stuff. I'll be blogging more about that in the coming weeks because I think we are working on a few fundraisers, too.
In April - we welcomed 10 new Zonta Members to our local club. It's a service organization that we have here but also internationally. If you were a visitor of my old blog you may remember some of my other Zonta posts in the past.
We had a guest speaker that night who rescues trafficking victims. He also is the head of our local YMCA.
A week or two before this gathering - some of our members helped another organization organize their Community Closet and Linens Closet. We re-donated 37 bags of clothing, got rid of several other bags of trash, and now their closets are organized. That was for the House of Hope which is a christian-based recovery house for women exiting prison for addiction related offenses. They can house up to 10 females at a time.
My niece, sister, and her husband currently have COVID but are doing well so far. Our weather continues to be tempermental. Our basement continues to flood. We have to get a roll-off/dumpster soon and start in with that to figure out what is going on there. I do have a lot more to post but I think I will stop here for now. How have you been doing?
