Cashew Avocado Whip/Dip

For this blog entry - it's a "this is how it started and this is how it ended" type post.  This is a photo looking down into the freshly blended mixture I made the other day consisting of Avocado, Cashews, Apple Cider Vinegar, Lemon Juice, Garlic, Onion, and Spices.  I've been experimenting with my new Ninja Blender and I have to say I am impressed.  The key for nuts would be to use the smaller container and use the extract feature.    look at how creamy and smooth it turned out!?

Here is one of the many things I used the dip with.  It's a bowl of Broccoli, Cauliflower, Carrots, and Water Chestnuts.  I covered it in Vegan Cheese Shreds and put a dallop of the dip on top of that.  It was yummy.  

I also used it for a dip with corn chips (nachos).  

I'm getting more and more excited about this blender the more I use it.  

I did do a smoothie with it but something didn't taste right about it.  It may have been my almond milk was a little off.  Not sure.  It was a Raspberry and Almond Milk Smoothie.  I ended up adding a little Agave which helped a bit.  I will try a different one once I purchase more almond milk.  Maybe with Blueberries instead.  But the blending process what totally fine.  I just have to remember to keep an eye on the liquid ratio while blending.  There is a bit of a learning curve there.
