I need to post something more positive and uplifting so I thought doing a bit of a photo dump and catching up on some foodie type things might be a good way to start. Last week I tinkered around with a possible new logo for the blog. What do you think? It stemmed from my old logo and dot com being on my IG way longer than it should have and I noticed I was still using that after my domain expired.
The middle of last week - when I went over to my parents house - I threw together this for a quick dinner. They had mini shells and I ended up making a Vegan Herbed Bechamel Sauce for it. It's basically just Flour, Almond Milk, Herbs, and maybe a bit of Vegan Margarine.
I wish this photo turned out better but the lighting in my house has been awful because of the weather and some other factors. Last Monday - on my way home from work - grabbed some mini shells from the store - as well as - Field Roast's Spicy Mexican Chipotle links. I cut up one of the link into coins and did a one-pot-meal out of it with some Vegan Cheese. It was so flavorful. I will most likely have a version of it again soon.
I had mentioned in previous posts about the Vegan Dinner Club getting together and being featured on TV. I was finally able to do some screengrabs from the report. I'm the one sitting in front of the window by myself with my hat and mask on all bundled up.
I was 1 of 3 people who walked in alone and didn't come with their family/friends. I have to say I was VERY anxious because of COVID but the other 2 ladies that walked in alone joined me at the table. Luckily all 3 of us had masks on and they remained on until we were actually eating. Plus the table we were placed at was HUGE and there was more room between us than it actually looks in these photos.
Everything was tasty and I'm very glad I went. I have always been an extrovert until COVID hit and it has made me quite introverted. I was grateful that the establishment was spread out a lot and that most everyone who attended had masks on while not eating. Plus you can see I was right near the door, too, so I tried my best to take as many precautions as possible.
I have to say I was VERY uncomfortable with being filmed while eating. There is no good way to be filmed while eating (in my book) - it looks so weird. And they had to do it while we were eating the Spring Rolls. Yikes! So Awkward! At least my hat looks cool. And speaking of hats - I finally found a new one that I liked and purchased. Hopefully in the near future I will post a pic of it. I'm usually the one taking the photos - not being taken a photo of - so it's rare.
